Whole or 1/2 Lamb Cut to Order
Please call or email to request a copy of our cutting order form or click here and order online. A $50 down-payment required with order, balance due on delivery. Orders are filled in the order that they are received. We let your lamb hang for 7-10 day to dry-age for optimum flavor, so please expect a couple of weeks from order to delivery of your lamb.
Frenched Rib Chops
This savory delicacy is perfect entreé for every occasion. These rib chops are from the tastiest cut of lamb. Highly prized and tender! They are delicious in every way. Cut from lamb racks, these chops are excellent broiled or grilled. The bone is exposed for an elegant presentation. Each rib is approx. 4-5 oz.
Frenched Rack of Lamb
For a truly exceptional dining experience, try 8 O'clock Ranch Frenched Rack of Lamb. These racks has a mild, buttery texture and flavor. We dry-age our lamb for 10 days, to enhance tenderness. Whether you are using a marinade for bold flavor or using a rub, this Rack of Lamb is a luxurious treat you do not want to miss. Each rack has between 4 and 10 Frenched Ribs on each rack.
Leg of Lamb
A boneless leg of lamb is truly a wonderful roast! Prized for its tenderness, the naturally delicate flavor of our lamb lends itself well to your preferences; add as much or as little flavoring as you like before cooking. It comes boneless and tied, ready to roast and serve. Each pound serves approximately 2 people.

Lamb Loin Chops - Porterhouse
Expertly cut from the loin, this time honored favorite is still a great way to enjoy grass fed lamb. They're the most tender chops on the lamb offering a wonderful lamb flavor. The chops are amazingly easy to prepare, you can quickly marinate and grill. 4 - 6 oz. each. 3-4 chops per package.
Whole Boneless Lamb Loin
Prized for its tenderness, this incredible hand-trimmed and fully de-boned lamb exudes a delicate flavor. Taken from the same area as your Lamb Loin Chops, these boneless Loins are a perfect cut to stuff and braise. For the discriminating cook!

Ground Lamb is like nothing you have tried before, much less coarse than ground burger, it is wonderful in tacos, lasagnas and much more! This ground is premium cuts from the entire lamb that are ground and sealed into bags to ensure the freshness!

We offer several varieties of lamb sausage! Sweet Italian is perfect for grilling or making into meatballs. Our mild Breakfast sausage you can either form your own patties or include it with your eggs or cook them seperatly using the links!
